Southwest Medley

What You Will Need

1 container fully cooked Tyson southwest grilled chicken (can be found with 
 packaged deli meats)
1 bag steamfresh super sweet corn
1 can black beans
container of fresh salsa (found in produce aisle)
1 bag of shredded cheddar cheese

Preparation

  1. Put steamfresh corn into microwave for time indicated on bag.
  2. Open and drain black beans, rinse off in colander.
  3. Take out four small Tupperware containers.
  4. Divide cooked corn into 4 equal amounts and put one portion into each container.
  5. Do the same with black beans.
  6. Take out chicken and divide into 4 even amounts, putting a portion into each container.
  7. Add as much fresh salsa as you prefer (it has almost no calories).
  8. Lastly, measure out 1/8 of a cup of shredded cheddar to sprinkle over each container (an eight of a cup for each one – ½ cup total).

Store these prepared meals in your fridge to take to work or for a quick lunch on the go. It will save you time and reduce impulsive last minute food choices. Each portion contains about 250 calories and lots of protein and fiber to keep you full through the afternoon. And most importantly, this recipe is delicious and guilt free!
